White Beans

White Beans – Healthy & Delicious!

Cannellini Beans are the best of the white beans. You can buy them dried and you can soak them overnight and simmer them OR you can just buy a can! Thoroughly rinse them and use in any of the following healthy side dishes.

Beans & Broccoli Rabe

Cook your broccoli rabe first. For perfect Broccoli Rabe, use my “Steam/Boil” method. Stand the bunch of Broccoli Rabe upright in a pot with about three inches of boiling water. The stems will boil but the leaves will steam above the water’s surface. This produces equally tender stems and florets.

Next add the Broccoli Rabe and tender white beans into a frying pan with olive oil, fresh garlic, coarse sea salt and fresh cracked black pepper. Toss the mixture together until heated through and thoroughly mixed. Stir gently as the beans and florets will be fragile. Garnish with grated Locatelli Cheese and fresh Basil Leaves.

Beans with Fresh Basil & Garlic.

In a medium-high frying pan, heat chopped Sweet White Onions in Oil. Lower heat to medium.Once Onions become translucent, Add crushed fresh Garlic and chopped fresh Basil to the oil until the garlic just begins to brown.

Add the beans and gently but often toss the mixture. Once heated through, serve with Dried Crushed Red Peppers on top and a drizzle of Fresh Olive Oil and squeeze of fresh lemon.

Beans with Escarole

Bring 3-4 cups of Chicken Broth to a boil. Add diced sweet white onion and shredded carrot. After about five minutes, add a head of chopped and THOROUGHLY washed escarole to the broth. At this point season with garlic powder, salt and pepper to taste. (Bear in mind that escarole is bitter and the salt will cut through)

Once the escarole is wilted, add your beans for another five minutes. (I like to crush a 1/4 cup of beans first and stir it in as a natural thickener. Serve the ingredients with a slotted spoon otherwise you have soup. Or just say it’s soup! Either way it’s AMAZING! Top with grated Locatelli.
