Soak two Cedar Planks in water for about an hour.
Grilled Cedar Plank Salmon with Pasta i Fagioli
This is an awesome Summer Recipe! You can substitute a nice flaky white fish such as cod and this recipe will still be delicious. Not everyone likes Salmon, but it does get some great flavor from the Cedar Planks! Please read the captions with each image to learn this awesome recipe!
Marinate Salmon in White Wine, Lemon Juice, Lime Juice, Onions, Cilantro & Fresh Lemons. Let Chill for 1-2 hours. Don’t worry about the fish changing color, it’s actually the acid of the citrus “Cooking” it – like a ceviche. Chop white onions and basil and place in a hot skillet until onions begin to become translucent. Add salt & pepper and lower to medium heat. Chop about 6 cloves of garlic. (OK – 8 cloves!!) Add Garlic to pan on MEDIUM heat so garlic doesn’t burn. Dice two tomatoes, which have had the seeds removed. Drain and rinse a can of Cannellini Beans and add them to the mix. Boil a half pound of Elbow Noodles. While pasta is cooking, stir this wonderfulness! Melt a half stick of Butter and add Cilantro and Garlic Powder. Place in an ice bath to make a solidified Compound Butter. Save for grilling later. Take a break and have a beer. Add the cooked elbows to the tomatoes & beans. Cover to keep warm. Place the planks on a hot grill for a minute on one side then flip them over. Add Your Marinated Salmon (Notice the lighter color) to the cedar planks and grill for a half an hour. Brush occasionally with the Cilantro Butter. The fish will slide right off of the skin. Serve without the skin. Add some olive oil to the Pasta i Fagioli and plate with the Salmon.
